Do I need a special pump?

No. The valve is sized for a standard vacuum cleaner hose, which is what most people use. The hand pump is there for travel or if your vacuum has an awkward nozzle, and it is listed as a separate option.

Which size do I need for a duvet?

A double duvet wants the 80 x 100cm as a minimum, and a king is happier in the 100 x 120cm. Under-sizing is the usual mistake, because a bag stuffed past the zip line will not seal.

Can I use them more than once?

Yes. Unzip, take the contents out, refill and re-seal. Keep the zip track clean, since a thread or a hair caught in it is the usual reason a reused bag slowly loses its vacuum.

Will the bag re-inflate over time?

It should not, but a bag that puffs up within a day almost always has something caught in the zip rather than a faulty valve. Re-run the slider along the track, check the seal is fully closed at both ends, and re-vacuum.

Is it safe for feather duvets and wool?

For storage over a season, yes, and it protects them from moths. Feather and wool want a shake out and a few hours to loft again when they come out, so unpack a duvet the day before you need it rather than the same evening.
